一想到做月饼,
这款去年鲸鱼老师大大力推荐的月饼就马上浮现在脑海。
不假思索就决定用这个食谱做饼皮,
再搭上自制的莲蓉馅,
多少有几分~满足感。
是一款非常酥香的月饼。
这个月饼模挺有意思的。
总觉得任何华丽的言语都不及这三个字 “我爱你”。
亲人之间,朋友之间和男女之间;
不管在喜悦得意或悲伤失落的状态,
这三个字往往都给予人的心灵最大的慰籍。
这三个字也是我和孩子们共同的语言。
每一天都不会忘记讲的话就是“我爱你,宝贝。”
表层:蛋黄液 + 少许的鲜奶(搅拌均匀)
份量:馅料 33g / 皮 30g
饼皮做法:
1)牛油放在室温中待软化后,加入糖粉及糖浆打至松发,再把蛋液分次加入后,打成牛油糊。
2)接着把面粉、奶粉和苏打粉过筛后,加入奶油糊中拌匀,即为面团。
3)把面团放在温室下松弛30分钟后,分割。
4)接着把馅料分成等份,搓圆。取一个饼皮面团在手掌上压扁。然后将饼皮包入馅料,再放入月餅模内打印出花纹的月饼。

5)预热烤箱,以150℃烤约10分钟后取出,在月餅表面刷上蛋黄液,再继续烤约20分钟即可。
Mooncake Skin making Methods:
1) Cream butter, icing sugar and golden syrup till fluffy, then add in egg yolk gradually.
2) Sift in flour, milk powder and soda powder, mix well.
3) Rest the dough for 30 minutes.
4) Divide the dough into equal portions. Flatten a portion on palm, place a portion of filling in the middle of the dough, place dough into a mooncake mould.
5) Bake in preheated oven of150 degree for 10 minutes to set the mooncake skin. Then remove it from the oven and brush with egg wash. Place it back to the oven and continue to bake for 20 minutes.

10g milk powder, sieved
1/4 tsp soda powder
1 egg yolk

莲蓉馅做法:
1) 莲子洗净后用清水浸泡至软。
2) 泡软的莲子摘去莲心,加入没过莲子的清水,用高压锅炖半个小时至莲子软烂。
3) 炖好的莲子稍稍冷却,等不烫手后,倒入食品料理机的搅拌杯里。
4) 炒锅烧热,加入一大勺花生油和2大勺细砂糖。
5) 翻炒片刻,使糖完全溶化并且颜色不断加热。
6) 当糖熬煮至焦红色的时候,倒入莲子泥,不断翻炒,使莲子泥与糖、油混合至吸收。倒入剩下的全部细砂糖,用中火加热并不断翻炒至莲子泥沸腾,转中小火。
7) 持续用中小火翻炒,炒的过程中分多次加入花生油。每一次都翻炒至莲子泥将花生油完全吸收后再加下一次。
8) 翻炒莲子泥变稠厚。
9) 翻炒至比较干而且比较硬的状态,就可以关火了。馅冷却后即可使用。

Add in the remaining sugar, stir fry the lotus paste.
7) During the stir frying process, add in oil gradually, till it combine with the lotus paste.
8) Keep stir fry until the lotus paste become a thick paste.
9) Stir fry until the lotus paste is firm, then remove from heat.
Allow to cool before using it.
