樱桃芝士纸杯蛋糕 Cherry Cheese Cupcake

最近逛超市,应该说最近去超市买菜时,都会看到新鲜的蓝莓草莓樱桃的踪影。上个星期,我老公买了一袋樱桃,吃了一些,还剩下的就想起了Sonia的食谱。趁樱桃还新鲜,昨晚赶紧做了这些小芝士蛋糕,今早送去女儿的幼儿园。

小朋友们都好期待呐!希望小朋友们喜欢这个芝士蛋糕,吃得开心!













食谱取自Sonia

材料 Ingredients:  

250g 奶油奶酪 (室温) 250g cream cheese, room temperature
30g 砂糖  30g caster sugar
2粒蛋黄(大) 2 egg yolks (large or A size)
30g 低筋面粉 30g low protein flour or cake flour
100g 鲜奶油 100g whipping cream, cold from fridge
1tsp 樱桃酒 (我没加)1tsp Kirsch (cherry wine), optional

2 粒蛋白 (大)2 egg whites (large or A size)
45g 细砂糖 45g caster sugar   

100g Oreo饼干 100g Oreo cookies
45g 融化奶油 45g melted salted butter


80g 新鲜樱桃 80g fresh cherries, pitted
20g 糖 20g sugar 

做法 Method:

1)把Oreo饼干放进食物处理粒搅碎。取出后加入融化奶油混合均匀。
Process Oreo cookies in a food processor till finely. Add in melted butter and mix well.

2)取两汤匙的饼干碎,放入纸杯里,压紧。
Add 2tsp of Oreo cookies into each cupcake liners, press it firmly.

3)樱桃去核,和糖一起放入食物处理机里搅打成樱桃泥。然后放进小锅煮成稍浓稠状。搁置一旁备用。
To prepare cherry filling, blend the fresh cherries with sugar in a blender till puree. Cook the cherry puree in a small saucepan till slight thicken. Set aside to cool.

4)鲜奶油打发至湿性发泡。备用。
Remove whipping cream from fridge, immediate beat till soft peak, set aside.

5)用搅拌器把奶油奶酪,糖和樱桃酒搅拌至顺滑。
Beat cream cheese, Kirsch and sugar till smooth (I use electric hand mixer).
6)加入蛋黄混合均匀。加入过筛的低粉混均。
Add in egg yolks and mix well. Add in flour and combine well.

7)再加入打发的鲜奶油混合均匀。
Mix in whipped cream, mix till well combine.
8)糖分三次加入蛋白,打发至湿性发泡。
Beat egg white till foamy (I use electric hand mixer), gradually add in sugar and continue to beat till soft peak formed.
9)用手拌器,把1/3的蛋白加入奶油奶酪面糊,拌均。
Use a hand whisk, mix in 1/3 meringue with cream cheese batter till combine.

10)用刮刀,以切半试,把(9)和其余的蛋白霜拌均。
Use a spatula, fold in the balance meringue, fold gently till combine.

11)把(10)倒入蛋糕纸杯里,然后放上一匙樱桃泥,用牙签随意画几圈。
Pour batter into muffin pan, and make marble effect with Cherry filling.
12)放进已预热的烤箱,以烘蒸方式,150度烤40分钟。
Bake at a pre-heated oven at 150C for 40mins at lower rack using steaming bake method (place a roasting tin underneath and add in hot water before putting in the cake tin). 

13)烤好后,将蛋糕冷蔵后才享用。
Store in fridge before consume.
