榴莲千层蛋糕 Durian Mille Crepe Cake

榴莲季节,爱吃榴莲的,应该都会买来吃吧!
爱榴莲又爱烘焙的,
当然不忘了留些榴莲肉做糕点。
纠结了一下下,到底怎么处置预留的榴莲肉呐?
最后还是决定做我没做过的千层蛋糕。
没有24cm的平底锅,
只好用家里的Tefal 稍大的平底锅。
结果只煎了8片。
我再把这8片切半,叠起来,
就成了16片。。哈哈。。
真有意思!成了半边的榴莲千层蛋糕!
只好下回再努力了!



















食谱取自Aunty Young

不沾平底锅(24公分)(我的锅稍大些)
可做20 - 22 片  (我只煎了8片)

千层蛋糕皮材料 Mille Crepe Ingredients:
A :鲜奶225克  225g fresh milk
      鸡蛋135克  135g eggs
      盐1/4茶匙   1/4tsp salt
      普通面粉65克  65g plain flour
      糖分28克  28g icing sugar
B : 牛油30克(隔水炖溶)  30g butter ( using double-boiling method to melt)


千层蛋糕皮做法 Method to make Mille Crepe:
1)材料(A)放入大碗搅拌均匀过滤。 休面30分钟,要煎之前加入(B)料拌匀。
Place all ingredients (A) into a mixing bowl, stir well till batter is smooth. Strain through a sieve, rest it for 30 minutes. Add in ingredient (B) and mix in well before frying crepe. 

2)以中火将不沾平底锅烧至冒起微烟,用勺子舀入适量的做法(1),迅速将锅转一圈至面糊薄薄地沾满锅底,将剩余的面糊倒回(1),然后将饼皮煎熟。
Heat a non-stick frying pan over medium heat till the pan is hot with a slight smoke seen. Use a small ladle to scoop up no. (1) and pour a little batter into the pan tilting it so that just a thin layer of batter covers the base. Pour off any excess batter back into no (1). Cook crepe till underside has set. 

3)当(2)的饼皮煎至边沿微黄,以刮刀刮离锅,再用手取出,放在一个碟子内,重复做法至完。每次舀面糊之前必须先搅拌,否则面糊最后会很浓稠。 万一面糊变稠了,可加入少许水调稀。
When the edge turns to a pale golden, use a spatula to ease it away from pan. Use your hand and carefully lift out the crepe. Lay the cooked crepes in a container while you cook the remainder.Remember to stir batter well before each scoop or else batter can thickens on standing ( if this happens,dilute it with a drizzle of water). Repeat process to the end. 


榴莲馅料 Durian Filling Ingredients:
A  :新鲜榴莲肉150克(滤过,取出幼滑的榴莲肉)  150g fresh durian (press through and sieve for smooth flesh)
       即溶蛋黄粉20克(我沒加)  20g instant custard powder (I didn't add this)
B  : 植物性鲜奶油220克,搅打至浓稠  220g  non-dairy fresh whipping cream, whip it up till thickened

榴莲馅料做法 Method to make Durian Filling:
1) 榴莲肉和即溶蛋黄粉一起搅拌至浓稠。
Mix the fresh durian with custard powder and beat till thickened.

2)加入已打发的植物性鲜奶油拌匀待用。

Add the whipped up non-dairy fresh whipping cream and mix well with a spatula.


组合 Assemble:
1) 铺1片饼皮在蛋糕板上。
Place one piece of crepe on a cakeboard.
 
2)  抹1层馅料。
Spread a layer of durian filling on top of the crepe.

3) 再叠上1片饼皮,用手按一下饼皮中间部分,在抹上1层馅料,重复至完。
Then stack on another piece of crepe on it. Lightly flatten with your hand along the centre point (this helps the cream to sit better. Repeat this process till finish.

4) 完成后,以保鲜纸包好,冷藏隔夜才享用。
Keep cake chilled overnight before serving.
